Our extra virgin olive oil is produced when the green olives starts to turn black.
Our extra virgin olive oil is produced when the green olives starts to turn black. In the period of harvesting from the trees we put the nets for harvesting on the ground that thanks to the autumn rains in that period is all covered with clover and other herbs: the olives never touch the ground, but rather rest on the nets lying softly on the grass . For this reason and since we fringe them on the same day, our family produces oil of the highest quality and acidity content close to zero, obtaining a sweet and fragrant oil.
