Tenuta Morano's artisanal tomato passata is made the old-fashioned way, using ripe, healthy tomatoes with absolutely no artificial preservatives or colorants. This thick, rich, and velvety sauce comes from hand-harvested fruits grown in our fields, selected one by one to guarantee the true flavor that only a homemade product can deliver.

Family Reserve Selection: Limited seasonal production in 720ml glass jars. Preserved naturally with just a pinch of salt and slowly pasteurized in a traditional bain-marie water bath.

Artisanal Tomato Passata / Sauce – 1,300g of Tomatoes per 720ml Jar

We reject industrial processes that dilute flavor with water. To fill a single 720ml jar, we select and press approximately 1,300 grams of fresh, ripe tomatoes. Grown on well-drained soils, our tomatoes naturally concentrate their sugars and rich pulp, eliminating excess liquid.

The secret of thickness: In Calabria, we use the ancient term "nsimula" to describe this unique, rich, and velvety density that coats pasta beautifully without sliding off the plate.

  • Hand-Harvested & Rested: Hand-picked in August, our tomatoes rest in crates to stabilize internal juices and maximize natural sweetness.
  • Pure River-Well Washing & Cutting: Washed with running water from our underground well near the riverbank, cut in half one by one, blanched, and naturally drained in baskets.
  • Traditional Bain-Marie: Preserved with just a pinch of salt (2%) and zero additives. The 720ml jars are slowly pasteurized in a traditional bagnomaria (water bath).
