By law, an oil can be labeled Extra Virgin if its acidity does not exceed 0.8%. Tenuta Morano achieves an exceptional value of approximately 0.1% total acidity at the time of milling. This pristine chemical purity is the secret behind the freshness of our artisanal preserved vegetables.
Q: I noticed a slight sediment at the bottom of the bottle. Is the oil spoiled?
A: Not at all. Because we refuse industrial filtration to preserve the oil's full body and healthy antioxidants, a thin veil of olive pulp naturally settles over the months. This is visual proof of an alive, authentic, unadulterated product.
Q: Can I order fresh "Olio Nuovo" directly in large stock tins in October?
A: The cloudy, intensely fragrant oil freshly pressed in October is exclusively bottled in our 250ml tasting size, available on the website only through October and November. We do not pack freshly pressed oil into large tins as microscopic water particles could compromise the long-term aroma. Our stock tins are filled only after a safe, natural decantation process.
Q: Can I use this oil for deep frying or high-temperature cooking?
A: We highly discourage it. By selling our entire harvest within the same year, our oil retains an incredibly high amount of active polyphenols and antioxidants. Burning them in hot frying oil would be a waste. Always enjoy it raw to fully embrace its health benefits.
