Tenuta Morano artisanal Extra Virgin Olive Oil is cold-extracted from estate-grown olives along the Ionian coast of Calabria. Thanks to a family tradition passed down through generations, we create a naturally sweet, unfiltered oil that is perfectly balanced and ideal for drizzling raw over your favorite dishes.

The Art of Harvesting and Cold Milling (Short Supply Chain)

  • Harvested on Clover Beds: We reject aggressive industrial methods. Our historic groves are carpeted with natural clover. During harvest, our nets are spread over this soft green bed: the olives never touch the bare ground, preventing any bruising or unwanted fermentation.
  • Immaculate Raw Material: Thanks to the clover bed, our olives arrive at the mill perfectly clean and free from soil or dust. Although the process includes the mandatory washing before milling, working with naturally clean fruit from the start ensures zero risk of flavor contamination.
  • The Evolution of a Dynamic Blend: Harvesting begins in mid-October when the olives are green and peaks in December. This slow process beautifully fuses the dynamic character of Grossa di Gerace and Ottobratica with the smooth, fruity roundness of Frantoio.
  • Same-Day Cold Extraction: Each day, the harvested fruits are immediately brought to the mill and processed within hours. Extraction is strictly carried out cold (below 27°C / 80°F) to protect all organoleptic properties, original aromas, and healthy polyphenols.
  • Unfiltered Natural Decantation: Our oil does not undergo forced industrial filtration which would thin its body. We let it clarify naturally in our cool cellars, allowing microscopic pulp fragments to settle down. It is then bottled dense, raw, and intact.

The Elite Standard: An Outstanding 0.1% Acidity

By law, an oil can be labeled Extra Virgin if its acidity does not exceed 0.8%. Tenuta Morano achieves an exceptional value of approximately 0.1% total acidity at the time of milling. This pristine chemical purity is the secret behind the freshness of our artisanal preserved vegetables.

❓ Connoisseur’s Curious Questions & FAQ

Q: I noticed a slight sediment at the bottom of the bottle. Is the oil spoiled?
A: Not at all. Because we refuse industrial filtration to preserve the oil's full body and healthy antioxidants, a thin veil of olive pulp naturally settles over the months. This is visual proof of an alive, authentic, unadulterated product.


Q: Can I order fresh "Olio Nuovo" directly in large stock tins in October?
A: The cloudy, intensely fragrant oil freshly pressed in October is exclusively bottled in our 250ml tasting size, available on the website only through October and November. We do not pack freshly pressed oil into large tins as microscopic water particles could compromise the long-term aroma. Our stock tins are filled only after a safe, natural decantation process.


Q: Can I use this oil for deep frying or high-temperature cooking?
A: We highly discourage it. By selling our entire harvest within the same year, our oil retains an incredibly high amount of active polyphenols and antioxidants. Burning them in hot frying oil would be a waste. Always enjoy it raw to fully embrace its health benefits.
